I'm not going to lie, these weren't my favourite things to make in the world, it was a very straightforward recipe and the end prodct wasn't my best work but they did taste okay and were lovely with a cup of tea.
115g of butter
115g of crunchy peanut butter
115g of caster sugar
115g of brown sugar
1 egg
1/2 teaspoon of vanilla essence
85g of plain flour
1/2 teaspoon of bicarbonate of soda
1/2 teaspoon of baking powder
pinch of salt
115g of rolled oats
METHOD:
1. Pre-heat the oven to 180 degrees celcius (350 degrees F/gas mark 4) and grease & line a large baking tray.
2. Put the butter, peanut butter into a bowl and beat together.
3. Mix both the sugars into the butter mixture then gradually beat in the egg & vanilla.
4. Sift the flour, bicarbonate of soda and baking powder and the salt into the mixture then add the oats and mix until fully combined.
5. Place the mixture onto the baking tray and spread evenly (or alternitavly, spoon the mixture on to cookie like shapes but i find cutting at the end is simplier).
6. Bake for 12 minutes (or until golden brown) and then remove and leave to cool on the baking tray for 2 minutes then a wire cooling rack.
It's a quick recipe (only took me around 20 minutes to make and bake, lol rhymes) and is good to make when you just want something to have with your afternoon tea. Not suitable for people with nut allergies due to the peanut butter and yeah, you know the drill!
